TRIGGER'S SOUTHWESTERN CORN MUFFINS

1 egg
1/4 cup Trigger's Garden salsa
1/4 cup fat free milk
1 package (8 1/2 oz.) corn muffin mix
1 can (7 oz.) corn, drained
1/2 cup shredded reduced fat cheddar cheese
1/4 cup green onion slices

Preheat oven to 400 degrees. Beat egg with milk and salsa in medium bowl. Add remaining ingredients. Stir just until moistened.

Spoon better into 6 medium greased muffin cups.

Bake 20 minutes or until golden brown. Remove muffins from pan to wire rack to let cool.
